Travelling around the world to meet producers who are passionate about their work is both duty and pleasure.
They let me discover even rarer and more precious beans which, reverently processed in our workshop, yield couverture chocolate that is more delicate and harmonious, more intense and therefore more alive!
My need to challenge conventions, question what I do and break new ground led to the creation of these chocolate squares that weight barely six grams, because our consumer codes have changed too: more flavour, more texture, more finesse, more fullness, and above all less heaviness...
Finding the best products when the product is at its best! Tell me, wht could be more moving than a slice of fresh bread, lovingly baked, promisingly buttered, awaiting its crown of splendid jam made from ripe fruit.
Ah, I know your mouth is watering! Love simple things, too, but as they are hard o achieve, I think that we can surprise people with more sparing, elegant products. As Mies van de Rohe said, "less is more"
